4 tablespoons of rice vinegar with 4 teaspoons of fresh ginger
2 tablespoons of minced garlic
Combine the dry ingredients (smoked paprika, sea salt, garlic powder, onion powder, cayenne pepper, cumin and black pepper) and mix them in a bowl.
Coat chicken halves with dry rub on both sides and set them in a pan to be grilled.
Combine ketchup, pineapple juice, soy sauce, rice vinegar with fresh ginger and minced garlic in a saucepan and mix them together.
Add chicken halves to the grill and sauce thoroughly and both sides.
Once finished, grill canned pineapple slices and top chicken halves in the pan.
Serve over white rice, sautéed sweat peas, and a biscuit.
